After 3 years training in Forte dei Marmi in Italy and setting up a small restaurant near Marseilles, for the past ten years I have been specializing in catering for parties in both the UK and abroad from our kitchen in Islington. Since January '07 we are now also cooking for Gloucestershire. At Max Waldron Organics you can now choose to be totally organic (depending on availability) or eat carefully sourced local ingredients grown responsibly without pesticides. Fish is sourced from approved fisheries.Our smallholding near Longhope in Gloucestershire is a great source of herbs, vegetables & fruit. The neighbouring village Blaisdon is the birthplace of the delicious and now rare Blaisdon Red plum of which we have half a dozen trees and have planted out a dozen saplings. A while ago, the area was an important plum-growing region, with the harvest being taken by train to the Robinsons factory in Hereford along the now dismantled railway at the bottom of the orchard. We are also lucky to have a Rivers Early Prolific plum, the first to ripen, and a delicious Marjorie's Seedling which ripens last. We are only just getting to know the varieties of apple, including the delicious crisp Blenheim Orange which also stores well, and the pink-skinned Beauty of Bath, which sadly does not. We have a Conference Pear tree which last year provided over 200 pears, delicious poached in wine, pureed & frozen into a pear & grappa sorbet, used raw in salads with local Blue Heaven cheese, or cooked into a delicious mild Pear & walnut chutney.

Max Waldron Organics, we source our meat either from certified organic suppliers, or from farmers local to the  Longhope valley, such as Nick Phelps at Blaisdon, and Andrew & Debra Fuller at Birdwood House Farm who are all committed to rearing local traditional breeds, all free range and without using growth promoters, hormones or routine antibiotics.The area is a wonderful source for other foods: Diana Smart near Birdwood makes delicious and award-winning Single & Double Gloucester cheeses in the traditional way, as well as Harewood, a more aged cheese near to Parmesan. Nearby we also buy Stinking Bishop cheese, its rind washed in a local perry made from Stinking Bishop pears.We use our low-emission Toyota Prius hybrid car to transport ingredients, and to make deliveries ourselves.
